Ground citron

Lemon peel

Blanched almonds
Red and green candied cherries
Juice from oranges and lemons

Directions

  1. Simmer beef tongue slowly until tender.
  2. Skin and trim.
  3. Grind; return to liquid when cool.
  4. Thinly peel the 2 oranges and two lemons.
  5. Parboil 3 times, changing water after each boil.
  6. Prepare simple syrup by combining 1 cup sugar with 2 cups water; add peelings and cook to a medium syrup.
  7. Add remaining ingredients.
  8. Mix thoroughly.
  9. Let stand a week before using.
  10. When baking pies, dilute with spiced sweetened vinegar or apple cider.
