Blackened Red Steaks Recipe

Ingredients

Boneless sirloin beef steak 1 to 1 1/4" thick

Fresh ground peppercorns

Salt-free seasoning

Garlic salt

Paprika

Unsalted butter or
Margarine

Dry red wine

Beef broth
¼
c
Chili sauce

Browned mustard

Small onion rings, sliced
Paper thin (about 3 small
Onions)

Flour

Unsalted butter or margarine


Watercress




Directions

  1. Wash and pat steak dry.
  2. Coat with pepper, salt-free seasoning and garlic salt.
  3. Spread paprika over all.
  4. Press firmly.
  5. Melt butter or margarine in large fry pan.
  6. Cook steak over high heat 3 minutes on each side to desired doneness.
  7. Will be dark and crusty.
  8. While steak is cooking, toss onion with flour.
  9. Cook a few at a time in hot butter or margarine about 1 minute, until brown and crisp.
  10. Keep warm.
  11. Remove steak from pan.
  12. Drain off any fat.
  13. Deglaze pan with wine.
  14. Add broth, chili sauce and mustard.
  15. Cook and stir to thicken, 2 to 3 minutes.
  16. Slice steak in thin diagonal slices, cross-grain.
  17. Spread red sauce over bottom of serving dish.
  18. Arrange steak, slices overlapping, over sauce.
  19. Spread onions on top.
  20. Garnish with watercress.
  21. Makes 4 servings.
