Directions
- Beef should be coarse ground round steak, lean chili grind.
- Put oil in large pot.
- Add onion, bell pepper, celery and garlic cloves.
- Cook until onion is transparent.
- Add meat slowly, stir until redness disappears.
- Add remaining ingredients, stirring after each addition.
- Lower heat to simmer.
- Simmer for 2-1/2 to 3 hours.
- Stir frequently to prevent scorching.
- This recipe is certified authentic chili recipe of Jay Pennington, winner of the 1977 Nevada state championship and the 1977 world championship.
