Hot Green Pepper

Salt To Taste

Garlic Salt To Taste

Directions

  1. Beef should be coarse ground round steak, lean chili grind.
  2. Put oil in large pot.
  3. Add onion, bell pepper, celery and garlic cloves.
  4. Cook until onion is transparent.
  5. Add meat slowly, stir until redness disappears.
  6. Add remaining ingredients, stirring after each addition.
  7. Lower heat to simmer.
  8. Simmer for 2-1/2 to 3 hours.
  9. Stir frequently to prevent scorching.
  10. This recipe is certified authentic chili recipe of Jay Pennington, winner of the 1977 Nevada state championship and the 1977 world championship.
