Tripe Florentine Recipe

Ingredients

Peanut oil

Carrots, grated

Celery, chopped

Yellow onion, peeled &

Parsley, chopped

Cloves garlic, crushed (8-oz) tomato sauce
½
c
Beef stock
½
c
Dry red wine

ts
Oregano
1
Bay leaf, crushed

ts
Basil
Salt & pepper to taste 1" pieces lemon peel
½
c
Parmesan or Romano
Cheese, freshly grated

Directions

  1. Parboil tripe for about 30 minutes.
  2. Drain & cool.
  3. Slice up tripe into 1/2" wide pieces.
  4. Saute very quickly in a little of the oil in a large frying pan.
  5. Saute in a little of the oil the carrots, celery, onion, parsley & garlic.
  6. Add the tomato sauce, beef stock and wine.
  7. Add the seasonings and lemon peel.
  8. Simmer the sauce for a few minutes, and then add the tripe.
  9. Cook it on top of the stove, covered, for 1-1/2 hours or until tender.
  10. Or bake it in a moderate oven.
  11. When ready to serve, sprinkle on the Parmesan or Romano.
  12. Serve with pasta.
